350g plain flour
180g soft brown sugar
1 tsp bicarb of soda
4 tbsp golden syrup
2 tsp ground ginger
1 fresh egg (beaten)
100g butter

Pre-heat oven to 190°C (ish), lightly grease a couple of baking trays
Chuck the flour, bicarb & ginger into a bowl
Rub in the butter until the mix looks a bit like breadcrumbs
Stir in the sugar, pour in the syrup & beaten egg
Whizz it all up to make the dough smooth, lightly kneading it a bit with your hands before finishing
Divide the dough in half (if you're not in a rush it helps to pop it into the fridge for 30 minutes before carrying on) blob it onto a lightly floured board & roll it out to approx 5mm thick
Cut out shapes (whatever takes your fancy really) & place ‘em carefully on to the prepared trays but not too close to each other coz they’ll spread out a bit as they cook...
Bake for 10-12 minutes
Allow to cool slightly then lift ‘em onto a wire rack & leave to cool completely....
